Adventures in Blackpool and London and a new recipe success – Weekend Blog 25th October 2019 Had a lovely day in Blackpool with my daughter and two grandchildren, Rosie and Zachary doing the whole Blackpool Lights tradition. We went late afternoon with the plan to take them wrapped up on the beach but unfortunately the tide was completely in! We did go onto the pier though and then we took them on a horse and carriage which they absolutely loved, even Zachary seemed enthralled with the princess style carriage. Hot sugary doughnuts in the car and then drove through the lights, they are both three and they giggled their way through the lights which they hardly seemed to notice, but it was a lovely day. Then on Thursday was our oldest friends birthday and we were off to the big smoke to his favourite restaurant of all time Rules, the oldest restaurant in London. It is full of character, traditional and first class service and food and great for people watching too. We used Airbnb as we were only staying one night and that meant we could stay in central London for a fraction of the price of a hotel, we got the train there off peak a real bargain and had a champagne lunch on the train, lovely. In the morning Jude and I had a bit of retail therapy, well to be honest I mainly did the shopping as the Zara on Oxford Road had some amazing things in and different to the stock in the Trafford Centre, even managed to make a start on some Christmas shopping too. We went for brunch in a fabulous Italian restaurant just off Oxford Road and then it was time to get the train home, lovely few days. Didn’t have much in to cook on Friday night so I decided to make some sort of pasta dish using what I could find. I had a sweet red pepper in the fridge, an avocado and a bag of spinach, it was a start! I chopped up the pepper and using olive oil, fried it with some lazy garlic, threw in some chilli powder and cumin and then a tin of chopped tomatoes with a dash of tomato puree and some pepper. Using whole wheat spaghetti and quickly blanching the spinach, I added this to the pan. I found some parmesan in the fridge and a garlic type flat bread in the freezer so used those too and lastly sliced the avocado on the top to serve, it was really tasty and I will be making it again, low fat and meat free for a change.
