Food and drink blog – Week end15th May 2020

Been trying my hand at a bit of baking this week, not my usual thing but had some banana’s that needed using so decided to try a new recipe for Banana Cake.  I have used Weight Watchers recipe for a while now but decided to try a fuller fat version, the only real change to the recipe was to use 4 oz of sugar which I substituted for brown sugar to be a bit more healthy and it turned out really nice.

I then had a go at making a carrot cake it doesn’t look that appetizing in the picture but it tasted good, the lemon icing really added a sharpness to it.

On Thursday I had some steaks in so I made a steak and rocket salad, something I have made before but not done for a while, its so easy and quick to do, simple flatten two rump steaks and then fry off each side quickly few minutes each side and set aside to rest.  Then quickly fry in olive oil some pine nuts until they are toasted, spread 2 table spoons onto a serving plate and then add the rocket salad, slice the steak and add onto the rocket salad with any juices from resting.  Then add the pine nuts with the oil they were cooked in and some grated parmesan, I served with some garlic ciabatta and French fries, oh and a nice glass of red.

Managed 3, 5K runs this week and came across some baby ducks it was a beautiful morning and nice and quiet too.  Saturday nights have become date night, so this week we decided to try a take away from a local Turkish restaurant which made a nice change.  I made a cocktail I created when I was on a girls holiday in Spain a few years ago, called Kimbo’s Cointreau Fizz,  simply put some ice into a nice cocktail style glass and pour over a generous glug of Cointreau, then add some Cava and top up with soda water and a strawberry, lush.

Decided to treat myself to a new pair of flip flops which I seem to be living in at the moment, from Havainas  bought them straight off their website with 20% off and free delivery so worked out at £22 and they are lovely as they are a wedge so not so flat.

Lastly my lovely hubby ordered as a surprise for me, a delivery of Joe’s Popcorn, he had  bought these for me once on a train as they were the only thing that had dark chocolate on which is what I like so it was lovely to get these on the door step this week.
