Been trying my hand at a bit of baking this week, not my usual thing but had some banana’s that needed using so decided to try a new recipe for Banana Cake. I have used Weight Watchers recipe for a while now but decided to try a fuller fat version, the only real change to the recipe was to use 4 oz of sugar which I substituted for brown sugar to be a bit more healthy and it turned out really nice.
On Thursday I had some steaks in so I made a steak and rocket salad with toasted sesame and grated parmesan with a drizzle of fig balsamic, something I have made before but not done for a while, its so easy and quick to do;
Simple flatten two rump steaks and then fry off each side quickly few minutes each side and set aside to rest. Then quickly fry in olive oil some pine nuts until they are toasted, spread 2 table spoons onto a serving plate and then add the rocket salad, slice the steak and add onto the rocket salad with any juices from resting. Then add the pine nuts with the oil they were cooked in and some grated parmesan, I served with some garlic ciabatta and French fries, oh and a nice glass of red.
Managed 3, 5K runs this week and came across some baby ducks it was a beautiful morning and nice and quiet too great for practicing Mindfulness and reaping the benefits of nature.
