As we head into the winter there is nothing more comforting and beneficial than home made soup, so I decided to make some soup for lunch one day and found a pack of unopened beetroot I hadn’t used so decided to try to make Beetroot Soup! The ingredients I used (available!) were;
1 tbsp olive oil
1 tsp of lazy garlic
1 tsp of chilli flakes
250 grams of beetroot with any juices, roughly chopped
1 litre of vegetable stock, I used two cubes
Some double cream and croutons to garnish
Very quick to make, simply fry the onion, garlic and then add the beetroot (with any juices), vegetable stock and chilli flakes bring to the boil and then simmer for about 20 mins. Take off the heat and I use a hand blender to blend until smooth, ladle into bowls and stir in some double cream and add the croutons, very tasty and healthy too!
Beetroot is packed with essential vitamins, minerals and plant compounds, many of which have medicinal properties as well as low in calories. They also contain a good amount of manganese which is involved in many functions including brain function by brain-boosting blood flow. They are also a fantastic source of the chemical betaine anhydrous and the amino acid tryptophan, both of which are shown to improve your mood.
